Statistics Canada reports there was an approximate three per cent decline in the volume of wheat milled and made into flour last year.
Canadian millers milled 3.1 million tonnes of wheat with flour production coming in at 2.4 million tonnes.
About 94 per cent of the wheat milled between August 2020 and July 2021 went for human food uses—mostly in Canada but some for export as well.
The amount of durum wheat milled fell even further (11 per cent) to 209 thousand tonnes.
The lower milled wheat and flour production in Canada coincides with a 38.4 per cent drop in wheat production due to drought conditions over all three Prairie provinces last summer.
